A truly remarkable expression of Chenin Blanc, this is the pinnacle cuvée from a tiny parcel within Les Aussigoins — a wine of rare depth, restraint and precision. Castille 2022 captures the essence of Anjou at its most refined: quiet intensity, sculpted minerality and an almost architectural sense of balance. The nose unfolds slowly, revealing layers of citrus oil, ripe orchard fruit, white peach and delicate floral notes, all framed by a subtle chalky, almost smoky minerality. With air, a gentle creamy evolution emerges, adding richness without ever softening its vertical tension.
The palate is composed and deeply textural, with a seamless flow of fruit, acidity and mineral drive. There is a sense of weightlessness combined with power — a wine that expands rather than pushes, building in complexity towards a long, saline and resonant finish. The oak is present only as structure, never flavour, allowing purity and terroir to speak with clarity and confidence.

VINIFICATION
Gently direct-pressed fruit is aged for 24 months in old Burgundy-sized oak barrels. No fining, no filtration, no added sulphur. Extended élevage allows slow development of texture, depth and aromatic complexity while preserving purity and tension.
