Tímea Éless was born in Tállya and spent most of her childhood there. Her grandparents worked with vineyards as well as vine grafting, which explains why her love for grapes developed naturally. In 2009, she was more than happy to take over the 0.3 hectare plot from her grandfather. She only makes single vineyard wines from Tökösmály, Bártfai, Sípos and Palota – dűlő around the village of Tállya in the north-west part of Tokaj.
The rocky rhyolitic tuff soil mixed with rich luvisol, produces high quality grapes and wines with a crisp acidity and complex flavor profile. The 7 ha vineyard is planted mainly with 60 - 80 years old vines of Furmint and Hárslevelű. From the very beginning, Tímea has cultivated her vineyards in harmony with nature using no chemicals and avoiding completely synthetic pesticides. Her ultimate goal is to achieve a balanced interaction between man and nature in order to produce pristine wines. Timea wants to preserve the purity of the fruit so she ferments in porcelain eggs and stainless steel tanks. She was very excited to follow the development of her wines in “egg” when she first used it in 2014. The special porcelain vessel with 12 mm walls induces a constant flow so the wines develop a smoother texture and a powerful character.
This Pet Nat offers an aromatic nose with bright citrus notes, green apple, and a hint of white flowers, underscored by a touch of minerality. The lively bubbles add a playful effervescence, balancing the crisp acidity and subtle complexity. On the palate, the wine is fresh and clean, with flavors of ripe pear, citrus zest, and a delicate herbal undertone. The red clay and rhyolite tuff soils contribute a subtle depth and a slightly earthy finish, making this Pet Nat both lively and intriguing. Vinification
This Pet Nat is crafted with a traditional, minimal-intervention approach. The juice is direct-pressed and bottled while still fermenting, around the 15-20 g/l sugar level, allowing the natural bubbles to form during fermentation in the bottle. This single fermentation captures the vibrant fruit character and fresh acidity, while preserving the wine’s lively effervescence. The wine is then disgorged, removing the lees and leaving a crisp, clean finish. This method highlights the purity of the biodynamic grapes, showcasing the unique flavors of Tokaj’s terroir with a refreshing, naturally sparkling character.
As drinkable as water yet full of quiet detail, this single-vineyard Furmint captures the elemental purity behind Tímea Éless’s “Víz” (Water) series. The nose is vibrant and inviting, opening with white peach, and ripe pear, layered with hints of citrus peel and a gentle touch of honey honeyblossom. On the palate, the wine is pristine and finely structured, driven by bright acidity and a clean mineral line that reflects Tokaj’s volcanic soils. Light-bodied yet expressive, it finishes crisp, saline, and mouth-wateringly fresh — dangerously quaffable and deeply satisfying in its clarity.

Vinification
Hand-harvested on 14 September 2023, the grapes were gently pressed using a pneumatic press, with fermentation carried out without added yeast in stainless steel to preserve purity and freshness. The wine rested on its fine lees for 10 months, without bâtonnage, allowing texture to develop while retaining a light, transparent profile. Bottled on 17 July 2024, unfined, unfiltered, and with no added sulphur, this is a natural wine in its most precise and elegant form.

Víz translates to Water. From the 2020 vintage onwards, Tímea classifies her wines according to the five elements, each reflecting a distinct vineyard, soil type, and exposure. All wines in the SZÓLÓ range are single-vineyard expressions, offering stylistically unique yet terroir-driven drinking experiences.

Vinification
The grapes were hand-harvested together on 6 September 2022 from the Sipos–Palota vineyard and vinified as a single lot to preserve the natural harmony between Furmint and Hárslevelű. Following gentle direct pressing with a pneumatic press, fermentation took place without added yeast in a 675 L egg-shaped amphora, allowing constant natural circulation of the lees. The wine rested on its fine lees for 5 months, developing texture and depth without the need for bâtonnage.
Bottled on 28 February 2023, unfined, unfiltered, and with no added sulphur, this is a pure, uncompromising expression of volcanic Tokaj — where soil, structure, and energy are placed firmly at the centre of the glass.

Vinification
This wine is a multi-vintage blend composed of Aszú wines from 2021 (32%) and 2022 (40%), complemented by late-harvest fruit from 2023 (28%). All grapes were hand-harvested, with the botrytised berries undergoing 5–7 days of skin contact before gentle pressing in a pneumatic press. Fermentation took place primarily in stainless steel, followed by long élevage in a combination of medium-toast 200 L Zemplén (Kalina) oak barrels and stainless steel.
The wine spent between 22 months and 4 years on fine lees, without bâtonnage, allowing complexity to build naturally while preserving clarity and freshness. Bottled in September and December 2025, this Dolce was carefully shaped to balance richness with elegance — a sweet wine defined not by weight, but by harmony, precision, and drinkability.
A luminous, deeply expressive Tokaji Aszú that captures both richness and poise. Pale gold in the glass, the nose is intense and layered, unfolding aromas of ripe peach, quince, candied citrus, and acacia honey, interwoven with sweet spice, dried herbs, and subtle tea-leaf nuances. On the palate, the wine is concentrated yet remarkably silky, with flavours of dried apricot, dates, orange peel, raisins, and vanilla carried by soft, rounded acidity. Despite its depth and sweetness, the wine remains elegant and composed, finishing long and lingering with honeyed warmth, gentle spice, and a refined, velvety texture. A classic, beautifully proportioned 6 Puttonyos Tokaji Aszú that speaks clearly of patience, tradition, and terroir.

Vinification
This Aszú was crafted exclusively from 100% botrytised Furmint berries, meticulously hand-harvested one by one during October and early November 2017. Late-harvest Furmint for the Aszú base wine was picked separately on 20 October, 4 November, and 7 November 2017. The collected Aszú berries were then soaked in the base wine for one full week, beginning on 4 December 2017, before being gently pressed on 11 December using a pneumatic press.
Fermentation took place without added yeast, followed by ageing for 18 months in 200 L medium-toast Zemplén oak barrels crafted by Kalina in Tokaj-Hegyalja. After élevage, the wine was transported to Mád for careful finishing, including gentle fining with natural bentonite, filtration, and bottling. Bottled on 25 October 2019, this 6 Puttonyos Aszú shows the hallmark balance of Tokaj: profound sweetness shaped by time, noble rot, and finely tuned acidity.
